Instructions
  1. Put the sugar, egg yolks and butter in a bowl and mix together until well blended.
  2. Add the cocoa powder, the rum or cognac and 150 ml of alchermes.
  3. Remove the skins from the almonds, toast them, chop them up fine and then add them to the mixture, which should be fairly thick and not too runny.
  4. Slice the bread, cut the slices into smaller pieces depending on the desired size and toast them.
  5. Spread the mixture on the bread.
  6. Pour the remaining 50 ml of Alchermes on top of the toast to further enhance the flavour and make it visually more appealing.
